Bread bowl
I’m adding this to the blog not because I have an excellent recipe for the bread but because I want to remember how I made it.
Make the dough using around 2 cups of flour, 1tsp yeast, 1 tsp sugar, 1/2 tsp salt, some oil and water until you get a dough that doesn’t stick to your fingers. Knead it well for around ten minutes and then let it sit covered in a greased bowl for 1/2 hour.
I divided the dough into three parts but this does depend on the size of your bowls, the number of bread bowls you need, and the amount of dough you have. Take one part of the dough and flatten it on a silicone mat.
Now you’ll need a small foil container. Grease the outside of it and place it in the middle of the flattened dough. Now lift the entire thing up, flip and and place it back on the mat, so that the foil container is underneath the dough. Flatted the dough against the walls of the container and let it rise for 1/2 hour.
Place the bowls on a greased baking pan so that the foil containers are covered by the dough. Bake in a 190C oven until brown, around 20 minutes. Take them out, flip them over and carefully remove the foil containers. Place them back on the tray so that the cavity faces up and bake them for a few more minutes. If the edges are starting to darken, cover with aluminum foil.
Take them out of the oven and cover with a damp cloth for around 10 minutes. This will make the bread super soft.
Making the bread bowls this way reduces waste, since you don’t have to remove a chunk of bread to make room for your soup or gravy. It is also more sturdy.
For the stew, I let the chicken marinade for an hour with salt, pepper, chili powder, chili/hot sauce, and kithul treacle.
Boil some potatoes and carrots. Peel and cut into chunks once they have cooled.
Chop up some beans and spinach.
Switch multicooker to the baking setting and add some oil. Once it is hot, add some chopped onion, garlic and ginger. When the onion is turning brown, add the chicken. You can let the chicken brown for a bit if you like. Add whatever of the marinade is remaining in the bowl as well as some soy sauce, salt, tamarind sauce or paste, fish sauce, and water.
Let this boil for an hour. Add the vegetables. Add corn flour if needed. Let it boil for another 20 minutes. Once it is nice and thick, use a ladle to add plenty of veggies, chicken and gravy into the bread bowl. Enjoy!
